GRATEFUL ON MY BIRTHDAY

Today was a day of gratitude for me. As I celebrate another year of life, I recognize how fragile life is, especially after having gone through brain surgery this past December. I am learning every day to appreciate what I have and who I have in my life. Life has thrown me some "lemons" out there but I will continue learning to make lemonade and sometimes throw in a little tequila along the way! 


Thank you all for the messages, text and calls and delicious mint-oreo cheesecake! And to my kids, dad, bro, BFF, and good friends who celebrated with me today-THANK YOU! It was a great day! I am still ready and willing to keep celebrating on the weekend too.






Thank you and whoever is in "charge" up there for giving me a "break" and letting me go on enjoying my blessings just a little longer...

LIFE CAN BE SO PRECIOUS


RECIPE: Baked Penne with Roasted Vegetables


Ingredients


  • 2 red peppers, cored and cut into 1-inch wide strips
  • 2 zucchini, quartered lengthwise and cut into 1-inch cubes
  • 2 summer squash, quartered lengthwise and cut into 1-inch cubes
  • 4 cremini mushrooms, halved
  • 1 yellow onion, peeled and sliced into 1-inch strips
  • 1/4 cup extra-virgin olive oil
  • 1 teaspoon salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1 tablespoon dried Italian herb mix or herbs de Provence
  • 1 pound penne pasta
  • 3 cups marinara sauce (store bought or homemade)
  • 1 cup grated fontina cheese
  • 1/2 cup grated smoked mozzarella
  • 1 1/2 cups frozen peas, thawed
  • 1/4 cup grated Parmesan, plus 1/3 cup for topping
  • 2 tablespoons butter, cut into small pieces

  • Directions
     
    Preheat the oven to 450 degrees F.

    On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.

    Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.

    In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.

    Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.

14. Paper cut - crazy glue or chap stick (glue is used instead of sutures at most hospitals)
15. Stinky feet - Jello
16. Athletes feet - cornstarch
17. Fungus on toenails or fingernails - Vicks vapor rub
18. Kool aid to clean dishwasher pipes. Just put in the detergent section and run a cycle, it will also clean a toilet. (Wow, and we drink this stuff)
19. Kool Aid can be used as a dye in paint also Kool Aid in Dannon plain yogurt as a finger paint, your kids will love it and it won't hurt them if they eat it!
20. Peanut butter - will get scratches out of CD's! Wipe off with a coffee filter paper
21. Sticking bicycle chain - Pam no-stick cooking spray
22. Pam will also remove paint, and grease from your hands! Keep a can in your garage for your hubby
23. Peanut butter will remove ink from the face of dolls
24. When the doll clothes are hard to put on, sprinkle with corn starch and watch them slide on
25. Heavy dandruff - pour on the vinegar!
26. Body paint - Crisco mixed with food coloring. Heat the Crisco in the microwave, pour in to an empty film container and mix with the food color of your choice!
27 Tie Dye T-shirt - mix a solution of Kool Aid in a container, tie a rubber band around a section of the T-shirt and soak
28. Preserving a newspaper clipping - large bottle of club soda and cup of milk of magnesia , soak for 20 min. and let dry, will last for many years!
29. A Slinky will hold toast and CD's!
30. To keep goggles and glasses from fogging, coat with Colgate toothpaste
31. Wine stains, pour on the Morton salt and watch it absorb into the salt.
32. To remove wax - Take a paper towel and iron it over the wax stain, it will absorb into the towel.
33. Remove labels off glassware etc. rub with Peanut butter!
34. Baked on food - fill container with water, get a Bounce paper softener and the static from the Bounce towel will cause the baked on food to adhere to it. Soak overnight. Also; you can use 2 Efferdent tablets , soak overnight!
35. Crayon on the wall - Colgate toothpaste and brush it!
36. Dirty grout - Listerine
37. Stains on clothes - Colgate toothpaste
38. Grass stains - Karo Syrup
39. Grease Stains - Coca Cola , it will also remove grease stains from the driveway overnight. We know it will take corrosion from car batteries!
40. Fleas in your carpet? 20 Mule Team Borax- sprinkle and let stand for 24 hours. Maybe this will work if you get them back again.
41. To keep FRESH FLOWERS longer Add a little Clorox , or 2 Bayer aspirin , or just use 7-up instead of water.
42. Gatorade is good for Migraine Headaches (PowerAde won't work)
43. When you go to buy bread in the grocery store, have you ever wondered which is the freshest, so you 'squeeze' for freshness or softness? Did you know that bread is delivered fresh to the stores five days a week? Monday, Tuesday, Thursday, Friday and Saturday. Each day has a different color twist tie.
They are:

Monday = Blue,
Tuesday = Green,
Thursday = Red
Friday = White
Saturday = Yellow.

BEAUTIFUL BABY BOY

I am happy to report that our family has grown just a little more. Our grandson was born healthy and adorable yesterday, February 19th. He is more than a welcome blessing, he also made my young children aunt and uncle at a young age. :o) We are thrilled and cannot wait to meet him!

WAITING FOR BABY

This morning we wait for the news of when we will be grandparents for the first time!!!  My oldest step-son and his wife are going to have a baby today and we are so excited!    My little  ones are going to be be aunt and uncle at a very young age and they are way beyond thrilled.  Well, my daughter anyway, my little man is a little insulted that he is going to be "old" by already becoming an uncle...LOL!  Nonetheless, it is a very exciting time in our family.  We have had so many deaths in our family due to cancer, that this waiting is a good one.  It is a welcome blessing we are all anxiously waiting for.

I remember when I  met my step-son at around age 12.  He was this cute awkward kid, who never wanted to go to work with his dad in the summer-time, but had no choice.  That's where I met him.  It's amazing how much we have all been through since then.  His mom died, my mom died, and his two aunts died.  It has been a rough ride for all of us but we are that much stronger for it.  He grew up to be a smart kind, generous young man and was blessed with finding a wonderful wife.  They are going to make great parents.

So for now....we wait for the good news!

BE A WARRIOR!

So it has been two months since my craniotomy and I can honestly say I have come a long way both physically and emotionally!  I am about to celebrate my birthday at the end of this month and I am eternally gratefully to G-d, the Universe, whoever is in charge!  Even though I am not currently working, I am happy in having the time and health to have taken up my "mom duties" again!  Somehow, I had lapsed in this department.  Not only was I working full-time, an hour away, somehow, I had grown apathetic and aloof.  I don't know if I can blame it on my brain tumor but having survived one, I can definitely say, changed my life's perspective.

It is okay if I have to be in long car lines two times a day times two kids and it is okay if I have to go to the grocery store three times a week or pick up every shoe thrown around the house. I can appreciate those priceless moments, when my son tells me "Mommy, you are the best mom ever," when I know I am not.  I recognized that we don't have "forever."  I mean, I knew this as I experienced the death of my mom, many years ago but somehow, when you go through a life-altering experience, it hits home in a way that nothing else does.

I am also grateful to have found a group online of women (and some men)   https://www.facebook.com/groups/56743583446/  to ask questions when in doubt.  Things I wonder like, how long is my head going to feel numb?  And what others reactions were to steroids.  P.S. I can honestly say that coming off of steroids was one of the worst experiences!

All in all, I realized that I was extremely lucky in having had a Grade 1 tumor (benign.)     I remember standing in front of the mirror and seeing my head open (as my incision re-opened during a setback) and crying, not because of my scar, but because I imagined the heartache my mom and so many others went through having the knowledge that they would die. As a mother now, I understand the absolute grief of the thought of leaving your family behind. There are thousands of people each day who are faced with death, whether it be cancer or a tumor etc.. and I, well, I am the lucky one.  And so are you, if you are reading this.  You have another day in your life to make a difference, to fight, to be a warrior.  Take it!

GARCINIA CAMBOGIA (HCA)

I heard about this supplement, Garcinia Cambogia (HCA) via Dr. Oz and I also read an article on a social network about it.  Then I realized I knew where this natural supplement comes from.  A natural fruit called TAMARINDThe tamarind has been around for centuries, and according to research it is revolutionizing weight loss. I never tried the fruit but I just started the supplement.  I will let you all know how it goes.  I know I have to start exercising if I want to lose weight but I thought I'd give it a little jump start in the meantime.

YOU ARE CUTE

I was walking through the supermarket aisle looking for drinks on Super Bowl Sunday, looking lost and the guy who works there says to me, "Can I help you?"  I said, no thanks,   I really don't know what I want."  He smiled and said, "You are cute."  I smiled, said thank you and walked away, in my Yankees cap and even though it made my day, I thought to myself,  "Little does he know what's under this head!"  He wouldn't think it was so cute, if he saw it!

I am two month post craniotomy and my emotions don't stop even after surgery.  I read a post from a fellow meningioma survivor and I share the same sentiments:  I am in a place of absolute gratitude and I thank G-d (The Universe) every day and sometimes, even more than ten times a day.  Sometimes when I'm alone, I suddenly get emotional and it just catches up with me and say to myself "you had a brain tumor, you had your skull opened and your brain was rummaged in and you were blessed, you survived!!!"   I wonder will these thoughts ever go away or do they stay with you for your life time?  I do know, that I am blessed!
