"WARRIOR" FEATURE STORY OF THE MONTH - ELLEN JACOBY

Our feature story this month is on this "warrior lady," world-renowned casting director, Ellen Jacoby,  who was voted "Woman of the Millenium," by Miami Metro Magazine. Jacoby is a Miami native, who is a former professional singer and dancer, who also had the ability to travel the world as an international backgammon champion, before returning to her beloved hometown, in the 1980’s.

When Ellen was 21 years old, she was singing at a Holiday Inn, and suffered a fall that left her paralyzed from the waist down, and in rehab for six months. During this time, a friend opened a club in the Bahamas and invited Ellen, where she became fascinated with backgammon, becoming a professional player and entering international tournaments, winning over 60 trophies.

After a while she felt it was time to move on to something different, and returned to Miami where a friend was opening up a casting company and wanted Ellen to join her. For a time, she considered whether or not to stay with the casting company or return to professional backgammon. She stayed with casting and formed her own company, Ellen Jacoby Casting International.

HOW TO MAKE A REAL CUBAN MOJITO COCKTAIL

Cuban Mojito recipe - How to Make an Authentic Cuba Cocktail
The original authentic recipe from Havana Cuba  (Ref. TasteofCuba.com)

Cuban mojito picture
There are countless recipes for the Mojito (pronounced moh-HEE-toh), but this version is for the one Hemingway himself enjoyed at the Mojito's place of birth: La Bodeguita del Medio in Havana, Cuba. If you are throwing a Cuban theme party, plan on serving mojitos.
  • Prep Time: 8 minutes
  • Cook Time: 0 minutes
  • Total Time: 8 minutes
Mojito Recipe Ingredients:
1 teaspoon powdered sugar
Juice from 1 lime (2 ounces)
4 mint leaves
1 sprig of mint
Havana Club white Rum (2 ounces)
2 ounces club soda

Place the mint leaves into a long mojito glass (often called a "collins" glass) and squeeze the juice from a cut lime over it. You'll want about two ounces of lime juice, so it may not require all of the juice from a single lime.
Add the powdered sugar, then gently smash the mint into the lime juice and sugar with a muddler (a long wooden device pictured below, though you can also use the back of a fork or spoon if one isn't available). Add ice (preferably crushed) then add the rum and stir, and top off with the club soda (you can also stir the club soda in as per your taste). Garnish with a mint sprig. Serves 1.
Optional Variations:
While the following isn't the authentic original Bodeguita del Medio Cuban recipe for a mojito, some people will take half of the juiced lime and cut into into four wedges to add to the glass.
Another variation is to add Angostura bitters to cut the mojito's sweetness, which is a popular version in Havana hotels although not the true Bodeguita recipe.
Some Cubans also use "guarapo" in place of powdered sugar. Guarapo is a sugar cane syrup available in the Latin food area of some supermarkets, some Latin grocery stores, and most internet Hispanic stores (typically sold in 12 ounce cans just like soft drinks).
Mojito Glasses and Muddlers

Traditional mojito glasses and drink muddlers are hard to find in stores outside of Florida.

If you want to purchase them online to entertain your guests, or as a gift to others, you can find them at The Cuban Store.

They have a variety of mojito glasses, wooden drink muddlers, and pitchers for large groups (On their menu go to "Home & Gifts" then "Barware."

CREATING A SELF-CARE STATION FOR YOUR TODDLER

Kaitlin Krull, of Modernize.com

As children grow, it’s important to teach them how to look after themselves. It not only saves time and effort on your part (in the long run, of course), but it also teaches them valuable lessons about life, self care, and their bodies. Use these tips and tricks for creating an effective self-care station for your toddler.

Station supplies

Your self-care station can be basic, (à la the Montessori method,) or it can house virtually everything your toddler needs to get ready in the morning and throughout the day.  If you decide on a basic self- care station, all you need is a:

-Washcloth
-Water basin
-Toothbrush
-Hair brush.

Consider adding child-friendly soap, toothpaste, towels, and a toilet station and you will be all set. Make sure to have a mirror as well, so your toddler can check her progress as she goes.

SHRIMP CREOLE – "Camarones Enchilados" (Cuban-Style)

Camarones enchilados recipe:

1 1/2 lb shrimp (21-25 per pound size), peeled, de-veined, peels reserved
1/2 tsp salt
1 T plus 1/4 cup olive oil
1 medium onion, finely diced
1 medium green bell pepper, finely diced
3 garlic cloves, minced
1/2 tsp oregano
1/2 tsp cumin
1 bay leaf
1/2 cup dry white wine
1 8-oz can low sodium tomato sauce
1 cup jarred red pimentos, and their liquid
1 T white wine vinegar 1/2 tsp Tabasco sauce
1/2 cup fresh peas
1/4 cup fresh parsley, finely chopped
salt and pepper to taste.

Directions:

1. In a small saucepan, saute the the shrimp peels in heated olive oil over medium high heat for about (5) minutes. Add 3/4 cups of water, 1/2 tsp salt and bring to a boil. Reduce heat to medium low and let simmer for about 20 minutes. Strain the broth into a bowl and discard the shells. Set broth aside.
2. In a caldero or 4-inch deep large saute pan, heat 1/4 cup of olive oil over medium heat. Add the onions, green bell peppers, oregano, cumin and bay leaf. Saute, stirring frequently, for 12 to 15 minutes until the vegetables are tender but not caramelized.

3. Stir in wine and let reduce for 2 to 3 minutes. Add the tomato sauce and the shrimp shell stock, the peppers and their liquid, vinegar, and Tabasco sauce. Bring to a boil and reduce heat to medium-low. Cover and allow to simmer for 15 minutes.

4. Add the peeled shrimp and fresh peas, cover and cook for another 8 to 10 minutes, until shrimp turns pink and curls slightly. (Be careful not to overcook them; they can turn rubbery if overdone.)

5. Stir in the parsley and let cook for another minute or 2.

Serve over a bed of white or brown rice. I of course, prefer white rice! Makes 4 to 6 servings.

THE LITTLE THINGS IN LIFE THAT COUNT

It's the little things in life that count! If only everyone did their part, the world would be a much better place. Here is a touching video that shows the power of paying it forward.  Let's all do our part!

IF ONLY I HOME SCHOOLED MY KIDS

My hats off to all the teachers out there who truly try to teach and for their incredible patience as they make an effort for our children to learn. Now I know why people "home school" their kids. I just spent 2 hours with my 8-year old having him do work sheets (on math & spelling) and it made me realize how little he learns in school.

These simple "Brain Quest" work sheets I used were so effective in teaching and practicing basic skills (that I believe should already be a "given" by the 2nd grade!) I feel like these 2 hours of straight teaching were so much more effective, than a day wasted on testing preparation and the "new" logic Math being taught in schools.

Basic math work, (not this fancy "schmancy" logic math and Common Core non-sense,) spelling, using words in a sentence, etc...all those "old school" teaching ways are not really re-enforced in school now-a-days.  And penmanship, is practically non-existent. Maybe it's just our school? Teacher? Policy? Maybe, there are just too many distractions in school? Who knows?

I don't know what it is, but I feel that kids today are not learning as they should. If only I home schooled my kids! I  just don't think I have the patience to home school them myself!

What do you think?

HOW TO DEFEAT HOMELESSNESS

This City Is Defeating Homelessness With Tiny Homes, But They Need Our Help!

Source:  Higher Perspective
April 27, 2015

On any given night in the central Oregon city of Eugene, there are about 3,000 people who don’t have a home to return to. Opportunity Village Eugene, a nonprofit organization based in that city, has a big plan to end it.
Tiny houses.
Opportunity Village panorama 1

The mission of Opportunity Village Eugene is simple but impactful: they want to create small, self-managed communities of low-cost tiny houses for those who lack homes. Opportunity Village isn’t a permanent housing arrangement for the city’s homeless. Rather, it’s a stepping stone to transitioning back into society and having a home themselves. “After only a few months of living there my girlfriend and I now are living a life where we are able to sustain a home on our own after being homeless for 2 years.” says Sam Johns on the organization’s website.

-31430a753c52c00f

Opportunity Village is a rather bare bones operation. The homes serve as shelter and a safe place to store belongings and not much more. The tiny homes are at most 60 square feet and are not equipped with running water, plumbing or electricity. Some residents have been able to get their hands on donated solar panels to power small devices like cell phones and small appliances.
But now, Opportunity Village Eugene is raising $15,000 to establish Emerald Village, a 15-home community that’s fully equipped with electricity, running water, outdoor fathering area, laundry facility, food pantry, walking paths, and a parking area. Each of the homes will be 128 to 250 square feet, a big improvement from the powerless, waterless 60 square foot homes.

Members of Emerald Village will make monthly payments toward operational costs of the cooperative and will share in the ownership of it. Each monthly payment will be at most $250 and will go toward utilities and a share of the village, earning the lower-income residents equity. Emerald Village will also be self-governed Democracy Style by the residents who live there.

As of this writing, Emerald city is $7,419 of the way to their $15,000 goal. They also have a matching grant for $50,000 in place right now too, so every dollar donated is doubled.
It’s a small step in countering a huge problem, but I get the feeling it’s going to be one of many.
